3 Ingredient Banana Pancakes
By now you’ve probably seen 3 ingredient pancake recipes floating around the Internet.
I tried a few and had lackluster results — some didn’t stay together, some didn’t taste right. That was until I was at my BFF Sydney’s house one morning.
She was giggling over the disastrous pancakes I had posted on Snapchat a few weeks prior while I stood there convinced 3 ingredient pancakes were a myth. And then she brought out her mini-blender. My brain’s light bulb went off the second she placed it on her island. Why hadn’t I thought of that?!
I watched as she casually threw in an egg, oats and a banana, blended it all up and poured perfectly sized pancakes into a hot pan coated with coconut oil to cook.
The results were delicate, refined sugar-free, gluten-free and super simple to make. Now in the middle of the week when I have a pancake craving but not the time to whip up a full batter, I can have this delicious alternative instead. Sydney says to add a tablespoon or so of flax seeds too, in case you want some extra protein, fibre and omega-3 fatty acids.

3 Ingredient Banana Pancakes
- 1 banana (fresh or thawed from frozen)
- 1 egg
- ½ cup oats
- Optional: 1 Tbsp. ground flax seed
1) In a mini-blender (You know, those ones sold to make smoothies in!) add all the ingredients. Blend until smooth.
2) Heat a pan over medium heat and add a teaspoon of coconut oil. Once hot and the coconut oil has melted, our batter into pan forming 3-4 pancakes.
3) Flip to cook other side and then serve with whatever toppings you have on hand!
