Well, not on a daily basis obvs. That would be awful ;-)
I was staring into my fridge one day, quite perplexed at what I was going to do with a Costco-sized package of pre-cooked beets. You can only use them as a salad topper so many times. I was on a bit of a sorbet kick at the time, so a strike of lightening hit and I realized that I HAD to make beet sorbet.
Now, beet sorbet on it's own sounds a bit dicey, but add in some honey and lime? Sweet perfection, my friends.
- 3 frozen cooked beets
- 2 limes
- 2 tbsp. honey (or agave, if vegan)
- Almond milk
In a food processor blend 3 frozen beets, the juice of 2 limes, 2 Tbsp. honey and a splash of almond milk. Top with lime wedges for the perfect Instagram shot #alushlife
