Blushing over Kombucha

Kom-bu-cha: a beverage produced by fermenting sweet tea with a culture of yeast and bacteria.

I can remember my first taste of kombucha. My brother and I had gone on a trip to San Francisco during our spring break from university. When our city bus pulled up to a stop right outside a Whole Foods store in Haight-Ashbury, I knew it was destiny. By then, I had already been an avid reader of a few food blogs and was dying to get my hands on a bottle of this fermented elixir. Sitting in the sun at a picnic table, I gulped my first sip of a tangy raspberry, ginger drink and fell in love.

Fast-forward to today, local kombucha producers are bringing the drink’s gut-healthy virtues to Calgary and surrounding areas. Wild Tea Kombucha, which first started brewing in 2015, is known for its cocktail-inspired, raw, unfiltered, small batch and non-carbonated kombucha made with fresh-pressed juices. Serendipitously, my first bottle of Wild Tea Kombucha (WTK) was last year’s Valentine’s Day release – Cupid’s Kiss.

This year, I was lucky enough to meet the stellar team (and I note, they are GOREGOUS inside and out) behind WTK and to get a sneak taste of 2017’s Valentine’s Day limited edition kombucha — Blushing Brew.

WTK teamed up with local beer producer, Wild Rose Brewery (WRB), to create a uniquely Albertan kombucha-beer — Blushing Brew. The final brew contains 1/3 of WTK’s hibiscus, juniper berry and rose petal kombucha with 2/3 of WRB’s Cowbell beer, a sour beer flavoured with kaffir lime leaves. Blushing Brew is hand-blended by WRB’s brewmaster, Mark Kerrigan, and together they create a light, effervescent and slightly pink drink that is perfect for cocktails and sharing a glass with the person you adore the most! Honestly, my bottle was gone in two days because I loved the romantic brew’s tingly sweet flavour.

With only 20 kegs being made, Blushing Brew will be available on tap Feb. 8 at Calgary’s Wild Rose Tap Room, Midtown, National (17th Ave and 10th Ave locations), Café Koi, and Charcut until supplies run out!
