Pancakes are my ultimate comfort food.

So you want pancakes ... but a little protein wouldn't hurt. And they need to be vegan. And gluten-free. Just when you thought you were out of luck ...

Chai Hemp Protein Pancakes

  • 4 tbsp. Manitoba Harvest Hemp Pro Fibre Protein (aka why the pancakes are GREEN!) 
  • 3/4 cup gluten-free baking mix (I like this Bob's Red Mill version)
  • 1 flax egg (1 tbsp. flaxseed meal mixed with 2 1.2 tbsp. water, let rest in fridge for 5 minutes)
  • 1 cup unsweetened almond milk
  • 1/8 to 1/4 tsp. each of cinnamon, cardamom, ginger, nutmeg and cloves

Mix ingredients together to form batter. Cook scoopfuls in a heated pan (medium heat) coated with coconut oil. Makes 1 serving. 

Served with a side of pear 🍐. Sooo filling and full of protein, fibre and omega fatty acids!
