Honey and Elderflower Coconut Lemonade

Finding a tasty low-sugar or sugar-free summertime lemonade has been my mission for the last few weeks.

I knew the weather was getting warmer and as much as I ADORE flavoured water, fruit-infused water and of course, kombucha, I wanted to add another beverage to my arsenal. Lemonade and iced tea have always been my go-tos but holy moly are most of them sugar bombs!

When Jillian Harris (my girl crush) posted a Coconut Lemonade recipe a few weeks ago, I instantly knew I could make a few tweaks to make this A Lush Life friendly recipe. The simple syrup got swapped for Eau Claire Soda Company’s Elderflower tonic water plus the ultra-smooth Drizzle Honey (both made in Alberta). The result was a tart yet creamy and refreshing lemonade that finishes with a sweet, smooth note of honey.

Unlike most store-bought or café-made lemonades, my version only has 16 grams of sugar per serving — calculated via My Fitness Pal — and a dose of healthy fats from the coconut milk. Compared to store-bought lemonades with upwards of 25 grams of sugar and a bottle of coke with 55 grams of sugar, I’m sticking with my homemade summertime refreshment! If you need even less sugar, feel free to add more water to the recipe to a) reduce the sugar per serving and b) make your pitcher last longer!

Honey and Elderflower Coconut Lemonade

Recipe adapted from Jillian Harris

  • 1 lemon, zested
  • 6 lemons, juiced
  • 1 ½ bottles Eau Claire Soda Company Elderflower tonic water
  • 1/3 cup + 1 Tbsp. Drizzle honey
  • 4 cups water
  • 1 cup coconut milk

1)   In a small saucepan over low heat, add the tonic water, lemon zest and honey. Heat until honey is melted.

2)   In a pitcher add: All the juice from the lemons, water and coconut milk. Stir.

3)   Once honey and tonic water mixture is cooled, add the liquid to the pitcher and stir again. Taste to see if more water needs to be added.

4)   Add in slices of lemon for colour and chill in the fridge.

5)   Serve in cocktail glasses with lemon wedges and dried coconut as a garnish.
