Pumpkin Spice Latte Smoothie Bowl

Forgive this basic post. 

It had to be done. There was some basic magic happening in my kitchen one morning. 1) It was hot outside. 2) A can of pumpkin was sitting in my pantry. 3) I reallyyyyy needed some coffee. Hence: 

Pumpkin Spice Latte Smoothie Bowl

  • 1 frozen banana
  • 3 tbsp. pumpkin purée
  • 1 1/2 tbsp. protein powder
  • A splash of coffee
  • Drizzle of honey (or agave, if vegan)
  • Pinches of cinnamon, ginger and nutmeg
  • Coconut cream (Place a can of coconut cream in the fridge overnight. In the morning, whip in blender or food processor)
  • Toasted pumpkin seeds (Place a layer of pumpkin seeds on a plate and microwave until golden brown or approx. 6 minutes)

Blend the banana, pumpkin purée, protein powder, coffee, honey, cinnamon, ginger, and nutmeg. Top with coconut whipped cream and toasted pumpkin seeds.
