Pumpkin Spice Pancakes with Hemp Hearts

When I jokingly called these pancakes “basic” (another word mayyyy have been added on the end of that sentence), the look my boyfriend gave me was one of pure confusion.

But hey! We all make fun of pumpkin spice this time of year but we all LOVE it! So why not embrace the pumpkin spice life and have fun using it in recipes!

These pancakes are based off of my 3-Ingredient Banana Pancakes. The concept is the same, I just had to add a few more ingredients to bring pumpkin spice pancakes to life (Did anyone else just hear “Spice Up Your Life” by the Spice Girls in your head? No? Here, I’ll link it for ya).

When the idea for this recipe came to mind, I wanted to bump up these pancake’s nutritional stats. Often pancakes are known as being sugary, cakey vessels to carry sugar syrups into you, but they can easily be made healthy and GOOD FOR YOU!

Pumpkin itself is a nutrient-dense food known for its potassium, Vitamin C, fibre and beta-carotine content (Which converts to Vitamin A in the body). Just make sure you’re using pure pumpkin puree, not canned pumpkin pie mix, which has additives and unneeded sugar.

Next, I wanted to make these PROTEIN Pumpkin Spice Pancakes by adding one of my favourite super foods — Manitoba Harvest Hemp Hearts. In the 3 tablespoons in this recipe, you’ll receive 10 grams of plant-based protein and 10 grams of omega-3 and omega-6 fatty acids. The protein and omega fatty acids are really important to me because, with a migraine brain, these are essential to helping me function on a daily basis. Also, this one serving will bring in 25% of your daily recommended value of iron, 80% of your daily recommended value of magnesium, and 30% of your daily recommend value of zinc — all vitamins and minerals I’m focusing on right now.

Pumpkin Spice Pancakes with Hemp Hearts

  • ½ cup oats
  • 1 egg (Or a flax egg to make these vegan! Mix 1 Tbsp. ground flax seed + 2 1/2 Tbsp. water and let stand in the fridge for 15 minutes until thickened)
  • ½ cup pumpkin puree
  • ¼ tsp. ginger
  • ¼ tsp. nutmeg
  • ½ tsp. cinnamon
  • pinch of salt
  • 3 Tbsp.  Manitoba Harvest hemp hearts
  • ¼ cup coconut milk

1) In a mini-blender (You know, those ones sold to make smoothies in!) add all ingredients and blend until smooth.

2) Heat a pan over medium-low heat and add a teaspoon of coconut oil. Once the oil has melted, pour batter into pan forming 3-4 pancakes. These pancakes cook best low and slow.

3) Flip to cook other side and then serve with pecans and pumpkin seeds! If you’re not sugar-free, a drizzle of maple syrup would take these pancakes to the next level.
