Sweet Potato Toast with Toasted Hemp Seeds

How in the world have I not been introduced to sweet potato toast before today?

As one of my favourite root vegetables, (Seriously, root vegetables ROCK: Beets, carrots, kohlrabi, onions, garlic, daikon, jicama, ginger and turmeric get a big 🙌 ) sweet potatoes are chock-full of vitamin A and potassium. Eat three slices of sweet potato toast in the morning and you’ll be on your way to a nutritious day.

Now you’re probably wondering how to make sweet potato toast. Trust me, it’s not as difficult as it seems! To make it easier on yourself, pick a medium-sized sweet potato at the grocery store that is similar in shape and diameter to regular spuds. When you get it home, lightly scrub the dirt off but don’t remove the skin — that’s where vegetables keep a lot of their nutrients! Cut only what you’re going to use into ½ cm thick slices. Then, it’s just like making toast! Place your rounds in the toaster and toast on medium heat until soft (It might take two or three times). I don’t mind mine having a bit of crunch so your toppings stay on top!

Savoury Sweet Potato Toast

This toast is great for a side dish at dinner.

  • 1 sweet potato, sliced into rounds
  • 2 cups leafy greens
  • 1 Tbsp. olive oil
  • 1 daikon, julienned
  • 1 tsp. fresh ginger, grated
  • 1 tsp. fresh garlic, grated
  • 1 tsp. fresh turmeric, grated
  •  pinch of salt and pepper
  • Ready-to-eat beets from the grocery store (Found by the produce)
  • Manitoba Harvest Sriracha Toasted Hemp Seeds

1)   Prep your sweet potato to be ready for the toaster.

2)   In a pan, sauté the leafy greens, daikon, ginger, garlic, and turmeric in olive oil. Season with salt and pepper.

3)   Toast sweet potato rounds when green mixture is fragrant.

4)   Top sweet potato rounds with greens and sliced beets.

5)   Sprinkle Manitoba Harvest Sriracha Toasted Hemp Seeds over rounds and serve.

 

Breakfast Sweet Potato Toast

  • 1 sweet potato, sliced into rounds
  • 1 avocado
  • 1 egg
  • Pre-made sauerkraut (Try Wild Brine)
  • Peanut butter
  • Banana
  • Salt and pepper
  • Manitoba Harvest Sea Salt Toasted Hemp Seeds

1)   Prep your sweet potato to be ready for the toaster. Slice off only what you’ll be using that day to keep the sweet potato fresh for future use. For this recipe I used three round slices.

2)   In a pan, cook an over-easy egg.

3)   While the egg is cooking, chop an avocado and a banana.

4)   Once egg is ready, pop your sweet potato toast down in the toaster (Remember, it might take two or three cook times!)

5)   On one round, smash half the avocado, season with salt and pepper and top with the over-easy egg.

6)   On the second round, smash the rest of the avocado and add a spoonful of sauerkraut on top.

7)   On the third round, spread a thick layer of peanut butter and top with banana. Sprinkle Manitoba Harvest Sea Salt Toasted Hemp Seeds over the banana for a hint of crunchiness!
