Vegan Cookie Dough Dip

Vegan Cookie Dough Dip

Some days being refined sugar-free is hard. I’ve slipped up… a lot lately.

It always catches me when I’m feeling down, when I don’t have food prepped or when I’m in out with friends. Add in a migraine and my carb/sugar cravings go through the roof.  Quitting sugar cold turkey was easy a few months ago, but this second time has been frustratingly difficult.

I’ve been fighting the sugar monster by upping my protein, having berries on hand (they have less sugar than other fruits) and having other “sweet” options available with added nutritional benefits like dates. The upside to this struggle is I’ve been able to experiment with ingredients. In my baking, I’ve swapped refined sugars for bananas, homemade date syrup and dried figs pulsed into a powder. Swapping out ingredients doesn’t always mean less sugar so I’m reducing quantities too.

One of my favourite recipes to have worked on while cutting sugar is a vegan cookie dough dip. If you’ve ever bought pre-made cookie dough at the grocery store or have licked a homemade cookie dough bowl clean, this recipe is for you. The white beans add PROTEIN and FIBRE, while the almond butter helps to make it taste just like its namesake. Feel free to use whatever chocolate chips/sweetener you like but I’m sticking to sugar-free or stevia-sweetened versions. I also like to mix it up by using carob chips too.

Vegan Cookie Dough Dip

  • 1 can white beans (250g), drained
  • 1/8 tsp. salt
  • 1/8 tsp. baking soda
  • 2 tsp. vanilla
  • ½ cup almond butter
  • 1 Tbsp. sweetener (Use agave syrup, maple syrup, date syrup or half a banana)
  • almond milk, if needed
  • ½ cup chocolate or carob chips

1)   Add all ingredients minus the almond milk and chocolate chips to a blender or food processor.

2)   Once mixed, add in almond milk as needed to make smooth and easy to dip. Add in extra sweetener, if wanted.

3)   Transfer mixture to a bowl and fold in chocolate chips.

4)   Serve with apple slices, pretzels or spread on a bagel or toast.
